Barrel Picks

Maker's Mark Jimmy's Pick

Maker’s Mark Private Selection Jimmy’s Pick (second edition) is 110.8 proof with a stave profile of 3 Maker’s Mark 46, 6 Roasted French Mendiant and 1 Toasted French Spice.  This recipe is very heavy on Maker’s Mark’s new Roasted French Mendiant stave, so this fantastic blend really showcases the flavors the new stave can conjour.

Maker's Mark Toss Up

Maker’s Mark Private Selection Toss Up, 110.7 proof, was a fun experiment which rendered an excellent batch. Since the selection team felt that the Maker’s Mark Jimmy’s Pick flavor profile couldn’t be matched, they left it up to fate to choose the stave combination for the second barrel pick and basically drew the stave choices out of a hat. The team was slightly apprehensive about the outcome, but were more than pleasantly surprised with this single barrel!  The combination of staves which were randomly selected  and included 3 Baked American Pure, 1 Seared French Cuvee, 1 Maker’s Mark 46, 2 Roasted French Mendiant and 3 Toasted French Spice.

Jefferson's Straight Rye Single Barrel Whiskey

Jefferson’s Straight Rye Single Barrel Whiskey finished in Cognac Casks marries the spice of American Rye with the refinement of cognac. Double barreled for at least 9 months and up to 19 months, it exemplifies Jefferson’s renowned and innovative maturation techniques. The Cognac finish adds complexity and depth to the typical one dimensional character of the spice of rye whiskey. The typical dryness on the finish is replaced with a thick mouth feel and honey and orange. A true sipping rye whiskey.

Starlight Huber Single Barrels

Starlight Pick 1588
(4 year non-chilled filtered 114.6 Proof)
This is more for the classic bourbon lover. This product is complex on the nose and palate, both of which immediately lead with notes of sweet cornbread and vanilla. It is then followed by pleasant notes of oak and rich, dark cherry.

Starlight Pick 1592
(4 year non-chilled filtered 114.8 Proof)
This is a little more soft and elegant. On the nose there is a nice dominant note of fresh baked pie crust followed by hints of baked apples and cinnamon. On the palate there is that burst of baked pie crust that is quickly followed up with a nice sweet hint of light fruits leading toward pear and into notes of sweet candy. It then finishes with a nice rounded balance of cinnamon spice. Completely makes you forget that this is sitting at 114.8 proof.
